Method

Brewing the Tea
  1. Boil 4 cups of water in a medium saucepan. Once boiling, remove from heat and add 3 black tea bags. Let steep for about 5 minutes. Stir in 0.5 cups of sugar until dissolved. Allow to cool, then refrigerate for at least 30 minutes.
Preparing the Fruit Mixtures
  1. In a blender, combine 1 cup of fresh sliced peaches, 1 cup of peach nectar, and if desired, a splash of vanilla extract. Blend until smooth.
  2. In a small saucepan, combine 1 cup of raspberries with 2 tablespoons of lemon juice and 2 tablespoons of sugar. Heat over medium for 5-7 minutes until thickened. Strain the puree to remove seeds.
Assembling the Drink
  1. Fill tall glasses with ice cubes. Pour the chilled tea into each glass halfway, add the peach mixture, then swirl in the raspberry puree for a gradient effect.
  2. Top each glass with sparkling water or club soda, gently stir, and garnish with mint sprigs and additional fruit.
