Brewing the Tea
- Boil 4 cups of water in a medium saucepan. Once boiling, remove from heat and add 3 black tea bags. Let steep for about 5 minutes. Stir in 0.5 cups of sugar until dissolved. Allow to cool, then refrigerate for at least 30 minutes.
Preparing the Fruit Mixtures
- In a blender, combine 1 cup of fresh sliced peaches, 1 cup of peach nectar, and if desired, a splash of vanilla extract. Blend until smooth.
- In a small saucepan, combine 1 cup of raspberries with 2 tablespoons of lemon juice and 2 tablespoons of sugar. Heat over medium for 5-7 minutes until thickened. Strain the puree to remove seeds.
Assembling the Drink
- Fill tall glasses with ice cubes. Pour the chilled tea into each glass halfway, add the peach mixture, then swirl in the raspberry puree for a gradient effect.
- Top each glass with sparkling water or club soda, gently stir, and garnish with mint sprigs and additional fruit.
