- Preheat your oven to 350°F (175°C) and spray a 9x13 inch casserole dish with cooking spray.
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, and sour cream. Mix until smooth.
- Fold in the drained Rotel tomatoes and taco seasoning into the chicken mixture.
- Spread ⅓ of the crushed Doritos evenly across the bottom of the casserole dish. Add half of the chicken mixture and half of the Mexican cheese blend.
- Repeat the layering with another layer of crushed Doritos, remaining chicken mixture, and top with remaining cheese.
- Bake in the preheated oven for approximately 25 minutes until the cheese is bubbly and edges are golden.
- Optional: Sprinkle any remaining cheese or crushed Doritos on top during the final five minutes of baking.
