  • 12 whole Stuffed Green Olives non-stuffed olives can be used
For the Pasta
  • 8 oz Black Bean Pasta or other gluten-free pasta
  • 1 tbsp Olive Oil or any oil of your choice
  • 1 medium Jalapeno Chile Pepper or bell pepper for milder flavor
  • 2 cloves Garlic Cloves fresh preferred, powdered can be used in a hurry

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground turkey, egg, crushed red tortilla chips, Mexican-blend cheese, and taco seasoning.
  3. Scoop the mixture and shape into meatballs about 1.5 to 2 inches in diameter, placing an olive half on top of each meatball.
  4. Bake the meatballs for 10-15 minutes until golden brown and cooked to an internal temperature of 160°F.
  5. Cook the black bean pasta according to package instructions in boiling salted water, then drain in a colander.
  6. Sauté chopped jalapeno and minced garlic in olive oil for 2-3 minutes until fragrant.
  7. Combine the drained pasta with the sautéed vegetables and serve the meatballs over the pasta.
