Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/2 cup freeze-dried strawberries crushed
  • 1/4 cup shredded coconut
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

  1. In a large mixing bowl, combine the rolled oats, almond butter, honey, crushed freeze-dried strawberries, shredded coconut, vanilla extract, and salt.
  2. Mix all the ingredients together until well combined. You may need to use your hands to ensure everything is evenly mixed.
  3. Once the mixture is fully combined, refrigerate it for about 30 minutes to help it firm up.
  4. After chilling, remove the mixture from the refrigerator and roll it into small balls, about 1 inch in diameter.
  5. Place the energy bites on a parchment-lined baking sheet and refrigerate for another 15 minutes to set.
  6. Store the energy bites in an airtight container in the refrigerator for up to one week.
