Ingredients
  

  • 1 cup fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 1/2 cup cream cheese softened
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 large tortilla gluten-free if needed
  • 1 tablespoon olive oil for brushing

Method
 

  1. Preheat the oven to 375°F.
  2. In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, black pepper, and salt. Mix until well combined.
  3. Lay the tortilla flat on a clean surface. Spread the spinach and feta mixture evenly over the tortilla, leaving a small border around the edges.
  4. Starting from one end, roll the tortilla tightly into a log shape.
  5. Slice the rolled tortilla into 1-inch pinwheels.
  6. Place the pinwheels on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
  7. Bake in the preheated oven for 15-20 minutes, or until the pinwheels are golden and the cheese is melted.
  8. Remove from the oven and let cool slightly before serving.
