Step-by-Step Instructions
- Preheat your oven to 350°F (175°C). Gather your ingredients and prepare your oven-safe skillet.
- Melt 4 tablespoons of butter in the skillet over medium heat. Add 5 to 6 sliced peaches and 1 cup of brown sugar, plus bourbon if desired. Stir gently for 5-8 minutes until peaches soften.
- In a large bowl, whisk together 1 cup of flour, 1/4 cup of pecans, 2 teaspoons of baking powder, and 1 teaspoon of cinnamon. Add the melted butter and 1/2 cup milk, mixing until just combined.
- Pour the batter over the peach mixture in the skillet without stirring. Dust with cinnamon sugar before baking.
- Bake for 35-40 minutes until golden brown. The edges should be crispy and the center spring back when pressed.
- Let the cobbler cool for about 10 minutes before serving, preferably warm with vanilla ice cream.

Notes
Use ripe peaches for best results. Any oven-safe skillet works, but cast iron is preferred for a crisp crust.
