Step-by-Step Instructions
  1. Combine all meatball ingredients in a large bowl and mix gently.
  2. Form the mixture into approximately 24 meatballs, 1 to 1.5 inches in diameter.
  3. Brown the meatballs in olive oil over medium heat for 2-3 minutes per side.
  4. Sauté the remaining chopped onion in the same skillet until soft.
  5. Add pumpkin puree and chicken broth to the skillet, stir and simmer for 5 minutes.
  6. Incorporate heavy cream and seasonings, simmer for an additional 5-10 minutes.
  7. Add browned meatballs back into the sauce and let simmer for 2-3 minutes.
  8. Cover and simmer for about 15-20 minutes, checking that the meatballs are cooked through.
  9. Serve over pasta, creamy polenta, or mashed potatoes, garnished as desired.
