Step-by-Step Instructions
  1. Marinate the chicken by placing chicken thighs in a mixing bowl. Pour in soy sauce, dark soy sauce, oyster sauce, black pepper, and corn starch. Toss until evenly coated and let marinate for 10 minutes.
  2. Heat oil in a non-stick pan over medium heat until it shimmers.
  3. Cook the marinated chicken thighs in the hot oil for 8-10 minutes, flipping halfway, until golden brown and cooked through.
  4. Stir in the white parts of the scallions and sauté for an additional 2 minutes.
  5. Add the green parts of the scallions and stir quickly for 10-20 seconds to combine.
  6. Serve the scallion chicken on a plate, garnishing with additional scallions or black pepper if desired.
