For the Steak
  • 2 pieces Ribeye Steak or strip steak or sirloin
  • 1 tbsp Salt to taste
  • 1 tbsp Black Pepper to taste
  • 2 tbsp Olive Oil for searing
For the Creamy Garlic Sauce
  • 2 tbsp Butter for richness
  • 3 cloves Garlic smashed
  • 2 sprigs Rosemary or Thyme
  • 1 cup Heavy Cream substitutable with coconut milk
  • 1/4 cup Parmesan Cheese grated
  • 1 tbsp Dijon Mustard for tang
  • 1/2 tsp Smoked Paprika optional
For the Garnish
  • 2 tbsp Parsley fresh, chopped

Method
 

Cooking Steps
  1. Pat the ribeye steaks dry, season generously with salt and black pepper, and let sit for 15-20 minutes.
  2. Heat 2 tbsp of olive oil in a skillet over medium-high heat. Sear the steaks for 3-4 minutes per side for medium-rare.
  3. Reduce heat, add 2 tbsp butter, garlic, and herbs to the skillet, and baste the steaks for 1-2 minutes.
  4. Remove the steaks and let rest for 5-7 minutes, covered loosely with foil.
  5. In the skillet, add another tbsp of butter and minced garlic; sauté for 1 minute. Pour in 1 cup of heavy cream and simmer.
  6. Mix in 1/4 cup grated Parmesan, Dijon mustard, smoked paprika, salt, and pepper.
  7. Slice the steak, plate it, cover with sauce, and garnish with parsley.
