  • 1 Egg Beaten
  • 1 cup Flour For coating

  • 0.67 cup Soy Sauce Divided (2 tbsp + 1/3 cup)
  • 3-4 tbsp Honey Adjust to taste
  • 1 tsp Rice Vinegar For tanginess
  • 1 tbsp Hoisin Sauce Optional
  • 3 cloves Garlic Minced
  • 1 medium Onion Chopped
  • 0.5 cup Water To thin the sauce
For Frying
  • 2 cups Oil For frying
For the Noodles and Garnish
  • 500 g Noodles Base of the dish
  • Sliced Spring Onions For garnish

Method
 

Step-by-Step Instructions
  1. Prepare the beef mixture by combining steak, 2 tbsp soy sauce, and one beaten egg in a bowl. Marinate for 10 minutes.
  2. Sauté the chopped onion and minced garlic in a large skillet over medium heat for 2-3 minutes until translucent.
  3. Make the sauce by adding 1/3 cup soy sauce, honey, hoisin/oyster sauce, rice vinegar, and water to the skillet. Simmer for 5-7 minutes until reduced by half.
  4. Heat oil in a pot over high heat to 350°F (175°C).
  5. Fry the marinated beef strips coated in flour in batches for 3-4 minutes until golden brown. Drain on paper towels.
  6. Combine the fried beef with the reduced sauce in the skillet and toss to coat for 1-2 minutes.
  7. Cook the noodles in salted boiling water as per package instructions, then drain and reserve some starchy water.
  8. Add cooked noodles to the beef and sauce in the skillet, mix gently. Adjust sauce with reserved starchy water if needed.
  9. Serve the dish topped with sliced spring onions for garnish.
