- Prepare the beef mixture by combining steak, 2 tbsp soy sauce, and one beaten egg in a bowl. Marinate for 10 minutes.
- Sauté the chopped onion and minced garlic in a large skillet over medium heat for 2-3 minutes until translucent.
- Make the sauce by adding 1/3 cup soy sauce, honey, hoisin/oyster sauce, rice vinegar, and water to the skillet. Simmer for 5-7 minutes until reduced by half.
- Heat oil in a pot over high heat to 350°F (175°C).
- Fry the marinated beef strips coated in flour in batches for 3-4 minutes until golden brown. Drain on paper towels.
- Combine the fried beef with the reduced sauce in the skillet and toss to coat for 1-2 minutes.
- Cook the noodles in salted boiling water as per package instructions, then drain and reserve some starchy water.
- Add cooked noodles to the beef and sauce in the skillet, mix gently. Adjust sauce with reserved starchy water if needed.
- Serve the dish topped with sliced spring onions for garnish.
