Ingredients
  

  • 2 large ripe peaches sliced
  • 1 cup shredded sharp cheddar cheese
  • 4 large flour tortillas
  • 2 tablespoons honey
  • 1 tablespoon butter
  • Pinch of cinnamon optional
  • Fresh mint leaves for garnish optional

Method
 

  1. Heat a large skillet over medium heat and add the butter, allowing it to melt and coat the bottom of the pan.
  2. Place one tortilla in the skillet and sprinkle half of the cheddar cheese evenly over the surface.
  3. Arrange half of the peach slices on top of the cheese, and drizzle with 1 tablespoon of honey. If desired, sprinkle a pinch of cinnamon for added flavor.
  4. Top with another tortilla and cook for about 3-4 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt.
  5. Carefully flip the quesadilla using a spatula and cook for an additional 3-4 minutes on the other side until golden brown and the cheese is fully melted.
  6. Remove from the skillet and let it cool for a minute before slicing into wedges. Repeat the process with the remaining tortillas, cheese, and peaches.
  7. Serve warm, drizzled with the remaining honey and garnished with fresh mint leaves if desired.
