Ingredients
  

  • 4 boneless skinless chicken breasts (about 1.5 pounds)
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup sun-dried tomatoes chopped
  • 1 cup couscous
  • 1 ½ cups chicken broth
  • 1 cup broccoli florets
  • 1 cup bell pepper diced
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Fresh basil for garnish optional

Method
 

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a shallow dish, combine the grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.
  3. Coat each chicken breast in the Parmesan mixture, pressing gently to adhere the cheese to the chicken.
  4. Heat olive oil in a large skillet over medium-high heat. Sear the chicken breasts for 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to the prepared baking sheet and bake in the preheated oven for 20-25 minutes or until the internal temperature reaches 165°F.
  6. While the chicken is baking, prepare the couscous. In a medium saucepan, bring the chicken broth to a boil. Stir in the couscous and sun-dried tomatoes, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork.
  7. In the same skillet used for the chicken, add the broccoli, bell pepper, and minced garlic. Sauté for 5-7 minutes until the vegetables are tender. Stir in the lemon juice and season with salt and pepper.
  8. Serve the Parmesan chicken over the sun-dried tomato couscous with the garlic veggies on the side. Garnish with fresh basil if desired.
