Ingredients
  

  • 1 pound salmon fillets skin-on preferred
  • 3 tablespoons unsalted butter softened
  • 2 tablespoons white miso paste
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons vegetable oil
  • 4 scallions chopped
  • Salt and pepper to taste
  • Lime wedges for serving

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine the softened butter, miso paste, honey, soy sauce, and rice vinegar. Mix until smooth and well combined.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Season with salt and pepper. Spread the miso butter mixture evenly over the top of each fillet.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked to your desired doneness.
  5. While the salmon is baking, heat the vegetable oil in a small skillet over medium heat. Add the chopped scallions and sauté for 2-3 minutes until they are tender and slightly crispy. Remove from heat and set aside.
  6. Once the salmon is done, remove it from the oven and let it rest for a couple of minutes. Top each fillet with the sautéed scallions and serve with lime wedges on the side.

Notes

  • For a spicier kick, add a teaspoon of sriracha to the miso butter mixture.
