Ingredients
  

  • 8 ounces halloumi cheese cut into 1-inch cubes
  • 1 red bell pepper cut into 1-inch pieces
  • 1 yellow bell pepper cut into 1-inch pieces
  • 1 zucchini sliced into 1/2-inch rounds
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Wooden or metal skewers

Method
 

  1. In a bowl, combine the olive oil, lemon juice, thyme, garlic powder, salt, and pepper.
  2. Add the halloumi cubes, bell peppers, and zucchini, tossing gently to coat. Let marinate for 15-30 minutes.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated halloumi and vegetables onto the skewers, alternating between cheese and veggies.
  6. Place the skewers on the grill and cook for 3-4 minutes on each side, or until the halloumi is golden brown and the vegetables are tender.
  7. Remove from the grill and serve immediately, garnished with extra lemon juice or fresh herbs if desired.
