Ingredients
  

  • 2 large grapefruits peeled and segmented
  • 2 ripe avocados diced
  • 1 cup baby spinach leaves
  • 1/4 cup red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tablespoons honey
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the grapefruit segments, diced avocados, baby spinach, red onion, and feta cheese. Gently toss to mix the ingredients without mashing the avocado.
  2. In a small bowl, whisk together the olive oil, honey, apple cider vinegar, salt, and pepper until well combined.
  3. Drizzle the dressing over the salad and toss gently to coat all the ingredients evenly.
  4. Serve immediately, or chill in the refrigerator for about 15 minutes to enhance the flavors before serving.
