Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup lime juice freshly squeezed
  • 1/4 cup olive oil
  • 1 cup corn canned or frozen, drained if canned
  • 1 cup black beans canned, drained and rinsed
  • 1 cup diced tomatoes fresh or canned
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. Preheat your grill or a grill pan over medium-high heat.
  2. In a small bowl, mix together the garlic powder, onion powder, cumin, paprika, salt, and black pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
  3. In another bowl, whisk together the lime juice and olive oil. Marinate the seasoned chicken in this mixture for at least 15 minutes, or up to 2 hours in the refrigerator for more flavor.
  4. While the chicken is marinating, prepare the corn, black beans, and diced tomatoes in a large bowl. Mix them together and set aside.
  5. Grill the marinated chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. During the last few minutes of grilling, top each chicken breast with the corn, black bean, and tomato mixture, then sprinkle with shredded cheese. Close the grill lid to melt the cheese.
  7. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Garnish with chopped cilantro and serve with lime wedges.
