For the Filling
  • 1 lb Ground Beef Substitute with turkey or meat substitutes for a lighter option.
  • 2 tbsp Taco Seasoning Store-bought or homemade blends work well.
  • 1 cup Cooked White Rice Swap for brown rice or quinoa for a healthier twist.
  • 1 cup Nacho Cheese Sauce Opt for a homemade version or dairy-free cheese for a vegan option.
  • 1/2 cup Sour Cream Greek yogurt can be used for a healthier alternative.
For Assembling
  • 4 large Flour Tortillas Use larger or smaller sizes based on preference.
  • 1 cup Shredded Cheddar Cheese Mozzarella or a Mexican cheese blend can be used instead.
  • 2 tbsp Chipotle Sauce Adjust the amount based on your spice tolerance.
For Grilling
  • 2 tbsp Butter or Oil Cooking spray can be a lighter approach.

Equipment

  • skillet
  • spatula

Method

Step-by-Step Instructions
  1. In a medium skillet over medium heat, add your ground beef, cooking for 8-10 minutes until browned. Drain excess fat, add taco seasoning, and 1/4 cup of water. Simmer for an additional 5 minutes until thickened.
  2. Warm flour tortillas in a dry skillet over medium heat for about 30 seconds on each side until pliable, or microwave covered with a damp paper towel for 15-20 seconds.
  3. Lay a warm tortilla flat, layer with rice, seasoned beef, nacho cheese sauce, chipotle sauce, sour cream, and shredded cheese.
  4. Melt 2 tablespoons of shredded cheese in the same skillet over medium heat. Place the assembled burrito seam-side down on the cheese and grill for about 3-4 minutes until crispy. Flip and repeat for another 3 minutes.
  5. Slice each burrito in half and serve immediately with salsa, guacamole, or a refreshing side salad.
