Ingredients
  

Salad Base
  • 4 cups chopped romaine lettuce can substitute with spinach
  • 2 medium diced Roma tomatoes cherry tomatoes can be used
  • 1 medium avocado or guacamole
  • 1 cup whole kernel corn use frozen corn if needed
Protein
  • 1 pound lean ground beef can use ground turkey or plant-based option
  • 1 can black beans drained and rinsed
Extras
  • 1 tablespoon olive oil can substitute with avocado or canola oil
  • 2 tablespoons taco seasoning homemade seasoning is an alternative
  • 1 cup shredded cheese dairy-free cheese can be used
  • ½ cup diced red onion green onions can be substituted
  • ¼ cup chopped cilantro parsley can be used as an alternative
Serving
  • 2 cups tortilla chips or homemade tortilla strips
  • 1 cup chunky red salsa or pico de gallo
  • ½ cup sour cream Greek yogurt can be substituted

Method
 

Cooking Instructions
  1. In a medium skillet over medium heat, warm 1 tablespoon of olive oil for about 1 minute. Add 1 pound of lean ground beef and 2 tablespoons of taco seasoning. Cook for 6–8 minutes until browned.
  2. Stir in 1 can of drained and rinsed black beans and half of the lime juice. Cook for an additional 2 minutes, then let cool.
  3. In a large mixing bowl, combine 4 cups of chopped romaine lettuce, 1 diced avocado, 1 cup of drained canned corn, 2 diced Roma tomatoes, and 1 cup of shredded cheese. Add the remaining lime juice and ½ cup of diced red onion. Toss lightly.
  4. Fold the beef and black bean mixture into the salad bowl with the veggies. Mix gently.
  5. Garnish with fresh chopped cilantro and serve immediately with tortilla chips, salsa, and sour cream.
