Ingredients
  

For the Kafta Mixture
  • 1 pound Ground Beef or Lamb Turkey can be substituted for a leaner option.
  • 1 medium Onion Freshly grated.
  • 2 cloves Garlic Freshly minced.
  • 1/4 cup Fresh Parsley Finely chopped.
  • 1/4 cup Fresh Mint Optional, can substitute with cilantro.
  • 1 teaspoon Ground Cumin Do not skip.
  • 1 teaspoon Ground Coriander
  • 1/2 teaspoon Allspice Can use more cumin and a dash of cinnamon if necessary.
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 tablespoons Olive Oil For brushing the skewers.
For Serving
  • 2 cups Fresh Vegetables (Tomatoes, Cucumbers, Red Onions) Sliced.
  • 4 pieces Pita Bread
  • 1 cup Hummus For dipping.

Method
 

Step-By-Step Instructions
  1. In a large mixing bowl, combine the ground beef or lamb with the grated onion, minced garlic, fresh parsley, and optional mint. Add in the ground cumin, coriander, allspice, salt, and black pepper, mixing thoroughly until all ingredients are well incorporated.
  2. Cover the meat mixture with plastic wrap or a lid and refrigerate for at least 30 minutes.
  3. Preheat your grill or grill pan to medium-high heat, around 375°F (190°C). If using wooden skewers, soak them in water for about 20 minutes.
  4. Once the mixture has chilled, take a portion and mold it around the soaked skewers into long, oval shapes, about ¾ inch thick.
  5. Lightly brush each skewer with olive oil. Place the skewers on the preheated grill and cook for 10–15 minutes, turning occasionally.
  6. While the kafta is grilling, slice fresh tomatoes, cucumbers, and red onions.
  7. Once the kafta skewers are grilled, let them rest for a couple of minutes before serving.
