Ingredients
  

  • 2 large chicken breasts about 1 pound, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup panko breadcrumbs
  • 1/4 cup honey
  • 2 tablespoons hot sauce adjust to taste
  • 2 cups cooked white rice
  • 1 cup corn canned or frozen
  • 1 cup black beans drained and rinsed
  • 1 avocado diced
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Method
 

  1. In a large bowl, soak the chicken pieces in buttermilk for at least 30 minutes to tenderize and add flavor.
  2. In another bowl, combine flour, Cajun seasoning, garlic powder, onion powder, salt, and black pepper.
  3. Remove chicken from buttermilk, allowing excess to drip off, then coat each piece in the seasoned flour mixture.
  4. Dip the floured chicken back into the buttermilk, then roll in panko breadcrumbs until fully coated.
  5. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Place the breaded chicken pieces on the sheet and bake for 20-25 minutes, or until golden brown and cooked through.
  6. While the chicken is baking, mix honey and hot sauce in a small bowl. Adjust the hot sauce to your preferred spice level.
  7. In a large serving bowl, layer cooked rice, corn, black beans, and diced avocado.
  8. Once the chicken is done, drizzle the honey hot sauce over the chicken pieces and toss to coat.
  9. Serve the crunchy chicken over the rice mixture, garnish with chopped cilantro, and add lime wedges on the side.
