Ingredients
  

  • 1 can 14.75 ounces salmon, drained and flaked
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper any color
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped (optional)
  • 2 tablespoons olive oil for frying
For the creamy lemon garlic sauce:
  • 1/2 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh dill or 1/2 teaspoon dried dill
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the flaked salmon, breadcrumbs, onion, bell pepper, mayonnaise, egg, Dijon mustard, garlic powder, salt, black pepper, and parsley (if using). Mix until well combined.
  2. Form the mixture into patties, about 2-3 inches in diameter. You should get around 8 patties.
  3. Heat the olive oil in a large skillet over medium heat. Once hot, add the salmon patties in batches, being careful not to overcrowd the pan. Cook for 4-5 minutes on each side, or until golden brown and crispy.
  4. While the patties are cooking, prepare the creamy lemon garlic sauce by mixing together the sour cream, lemon juice, minced garlic, dill, salt, and pepper in a small bowl. Adjust seasoning to taste.
  5. Serve the salmon patties warm with a generous drizzle of the creamy lemon garlic sauce on top.

Notes
