Preparation Steps

  2. Make Pumpkin Filling: In a bowl, whisk together pumpkin puree, granulated sugar, vanilla extract, and pumpkin pie spice until smooth. Transfer to a zip-close bag.
  3. Make Cheesecake Filling: Combine softened cream cheese, lemon zest, lemon juice, and sugar in another bowl until smooth. Place in a zip-close bag.
  4. Assemble Egg Rolls: Lay wrapper flat, pipe cheesecake and pumpkin filling down the center, brush edges with water, and roll tightly.
  5. Fry Egg Rolls: Fry in batches for 2-3 minutes until golden brown, turning halfway through.
  6. Coat with Cinnamon Sugar: Roll fried egg rolls in cinnamon sugar immediately after frying.
  7. Cool and Serve: Place on a wire rack to cool slightly before serving, with whipped cream if desired.
