  • 1 cup cooked chicken shredded

  • 1 teaspoon lemon juice

  • 2 large cucumbers

Method
 

  1. Cut the cucumbers in half lengthwise and scoop out the seeds using a spoon to create a hollow center.
  2. In a mixing bowl, combine the shredded chicken, Greek yogurt, mayonnaise, diced celery, diced red onion, chopped dill, lemon juice, salt, and pepper. Mix until well combined.
  3. Spoon the chicken salad mixture into the hollowed-out cucumbers, packing it in gently.
  4. Slice the cucumbers into 1-inch pieces for easy serving.
  5. Arrange the roll-ups on a platter and chill in the refrigerator for about 30 minutes before serving to enhance the flavors.
