Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 1 cup panko breadcrumbs
  • 1 tablespoon olive oil
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Fresh parsley chopped (for garnish)

Method
 

  1. In a medium bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
  2. In another bowl, beat the egg.
  3. In a third bowl, combine the panko breadcrumbs, lemon zest, and a pinch of salt.
  4. Dip each piece of chicken first into the flour mixture, then into the beaten egg, and finally coat with the panko mixture. Ensure each piece is well-coated.
  5. Preheat the air fryer to 400°F.
  6. Lightly spray the air fryer basket with cooking spray or brush with olive oil.
  7. Place the coated chicken bites in a single layer in the air fryer basket, making sure they are not overcrowded.
  8. Spray the tops of the chicken bites with a little olive oil.
  9. Cook in the air fryer for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F).
  10. Remove from the air fryer and drizzle with lemon juice. Garnish with chopped parsley before serving.
