Step-by-Step Instructions for Creamy Garlic Mushroom Chicken
  1. Pat the chicken thighs dry with a paper towel and season both sides with salt and pepper. Let sit for about 10 minutes.
  2. In a large skillet, combine 2 tablespoons of butter and 1 tablespoon of olive oil over medium-high heat.
  3. Carefully place the chicken thighs skin-side down in the skillet and sear for 5-7 minutes until golden brown.
  4. Flip the thighs and cook for another 3-4 minutes before transferring them to a plate.
  5. Add 8 ounces of diced mushrooms and 4 minced garlic cloves to the skillet and sauté for 4-5 minutes until browned.
  6. Pour in 1 cup of chicken broth, scraping up any browned bits, and let simmer for 2 minutes.
  7. Stir in 1 cup of heavy cream and bring to a gentle simmer, cooking for 3-5 minutes until slightly thickened.
  8. Return the seared chicken thighs to the skillet, spooning sauce over them. Cover and reduce heat to low, cooking for 10-12 minutes until done.
  9. Garnish with freshly chopped parsley or thyme and serve hot.
