  • 1 cup Apple Cider can replace with stock
  • 2 tablespoons Orange Liqueur or orange zest as a substitute
For the Seasoning
  • 1 tablespoon Five-spice Powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ginger
  • 1 teaspoon Nutmeg
  • 1/4 teaspoon Cayenne Pepper
  • 1 teaspoon Smoked Paprika
  • 1 tablespoon Brown Sugar
  • 2 tablespoons Maple Syrup
For the Creaminess
  • 1 cup Heavy Cream or coconut cream for vegan option

Method
 

Preparation
  1. Gather ingredients: chop onions and dice apples.
  2. Roast fresh pumpkin at 400°F for 45 minutes if using.
Cooking
  1. Cook diced bacon over medium heat for about 3 minutes until crispy.
  2. Sauté onions in bacon fat for about 3 minutes until translucent.
  3. Add diced apples and stir for about 1 minute.
  4. Incorporate pumpkin puree and return bacon to pot, cooking for an additional 2 minutes.
  5. Mix in chicken stock, apple cider, and orange liqueur.
  6. Stir in spices and sweeteners. Simmer for about 30 minutes.
  7. Blend the soup until smooth; return to heat and stir in cream.
  8. Serve garnished with cream and fresh herbs.
