Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup semi-sweet chocolate chips
  • 4 ounces cream cheese softened
  • 1/4 cup powdered sugar
  • 1 tablespoon cocoa powder

Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt.
  3. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the vanilla extract and egg until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips.
  7. In a separate bowl, beat together the softened cream cheese, powdered sugar, and cocoa powder until smooth.
  8. Using a tablespoon, scoop out a portion of the cookie dough and flatten it slightly in your palm.
  9. Place about a teaspoon of the cream cheese mixture in the center, then fold the dough around the filling to form a ball.
  10. Place the cookie bites on the prepared baking sheet, spacing them about 2 inches apart.
  11. Bake for 10-12 minutes, or until the edges are lightly golden.
  12. Allow the cookie bites to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
