Lay out the flour tortillas on a clean surface.
Divide the chicken mixture evenly among the tortillas, placing it in the center of each one. If using croutons, sprinkle them on top of the chicken mixture for added crunch.
Fold the sides of each tortilla inward, then roll from the bottom up to create a wrap.
Slice each wrap in half diagonally and serve immediately, or wrap in foil and refrigerate for up to 2 hours before serving.
