Ingredients
  

  • 2 cups brewed coffee cooled
  • 1/2 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger cookies
  • 1 cup cherry pie filling
  • Cocoa powder for dusting

Method
 

  1. In a shallow dish, combine the cooled coffee and amaretto. Set aside.
  2. In a large mixing bowl, whip the heavy cream until soft peaks form.
  3. In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and well combined.
  4. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  5. Quickly dip each ladyfinger into the coffee-amaretto mixture, ensuring they are soaked but not soggy.
  6. Arrange half of the soaked ladyfingers in a single layer in a 9x9-inch dish.
  7. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the cherry pie filling.
  8. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherry pie filling.
  9. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.
  10. Before serving, dust the top with cocoa powder.
