- Heat the olive oil in a large skillet over medium heat. Add the sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 10 minutes until the onions are soft.
- Sprinkle the sugar over the onions and continue to cook for another 15-20 minutes, stirring frequently, until the onions are deeply caramelized and golden brown. Add the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.
- Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking sheet. Top each slice with a generous portion of the caramelized onions and a slice of Brie cheese.
- Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and season with black pepper. Garnish with fresh thyme leaves if desired. Serve warm.
