Ingredients

  • 1 large onion thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 tablespoon balsamic vinegar
  • 8 slices of crusty bread such as baguette or ciabatta
  • 8 ounces Brie cheese sliced
  • Fresh thyme leaves optional, for garnish
  • Black pepper to taste

Method

  1. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and sprinkle with salt. Cook, stirring occasionally, for about 10 minutes until the onions are soft.
  2. Sprinkle the sugar over the onions and continue to cook for another 15-20 minutes, stirring frequently, until the onions are deeply caramelized and golden brown. Add the balsamic vinegar and cook for an additional 2 minutes. Remove from heat and set aside.
  3. Preheat your oven to 400°F (200°C). Arrange the slices of bread on a baking sheet. Top each slice with a generous portion of the caramelized onions and a slice of Brie cheese.
  4. Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and season with black pepper. Garnish with fresh thyme leaves if desired. Serve warm.

Notes

  • For a twist, try adding sliced apples or pears on top of the Brie before baking for a sweet contrast.
  • Alternatively, you can use goat cheese instead of Brie for a tangy flavor.
