Ingredients
  

  • 2 cups fresh blueberries
  • 2 cups fresh apricots pitted and sliced
  • 1 cup granulated sugar divided
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter melted
  • 1 cup milk
  • 1 teaspoon ground cinnamon

Method
 

  1. Preheat your oven to 350°F.
  2. In a large mixing bowl, combine the blueberries, sliced apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss gently to coat the fruit and set aside.
  3. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
  4. Pour in the melted butter and milk, stirring until just combined.
  5. Pour the fruit mixture into a greased 9x13-inch baking dish.
  6. Spoon the batter over the fruit, spreading it evenly.
  7. Sprinkle the ground cinnamon on top.
  8. Bake for 40-45 minutes or until the top is golden brown and a toothpick inserted into the batter comes out clean.
  9. Allow the cobbler to cool for about 10 minutes before serving.
