Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In your chosen baking dish, arrange halved cherry tomatoes, diced red bell pepper, chopped red onion, minced garlic, and cubed feta cheese. Drizzle with olive oil.
  3. Mix together dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Sprinkle the seasoning over the vegetable and feta mixture.
  4. Bake for about 25 minutes, until the feta is golden and vegetables are tender.
  5. Fold in baby spinach and let it wilt slightly.
  6. Create wells in the mixture and crack an egg into each well. Return to the oven and bake for another 10 minutes until egg whites are set.
  7. Sprinkle with chopped fresh herbs or chives and serve warm with bread or pita.
