Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. Cook 1 pound of ground beef with a chopped onion in a large skillet over medium heat until browned and onion is softened, about 5-7 minutes. Drain excess fat and season with garlic powder, cumin, salt, and pepper.
  3. Spread half of the diced green chiles in the bottom of the greased baking dish, then spoon the cooked beef mixture evenly over it, followed by half of the shredded Monterey Jack cheese and the remaining chiles on top.
  4. In a medium bowl, whisk together 4 eggs, 1 cup of milk, 1 cup of flour, and 1 tablespoon of baking powder until smooth. Pour this batter over the layered beef and chiles in the baking dish.
  5. Sprinkle the remaining cheese over the top and bake for 35-40 minutes until golden brown and set in the center.
  6. Allow to cool for 5-10 minutes before garnishing with cilantro and jalapeños and serve.
