  • 1 medium bell pepper any color
  • 2 pieces bay leaves discard before serving
  • 1 cup carrots optional, sliced

Method
 

Step-by-Step Instructions
  1. Marinate Chicken: Combine chicken pieces with marinade ingredients and marinate for at least 1 hour.
  2. Prep Chicken: Remove chicken from marinade and let rest for 15 minutes at room temperature.
  3. Brown Chicken: Heat oil in a pot and brown chicken for 3-4 minutes on each side.
  4. Prepare Sauce: Add reserved marinade, deglaze, and add broth, bell pepper, Scotch bonnet, and ketchup to the pot.
  5. Simmer Chicken: Return chicken to pot, bring to a boil, then reduce to low and simmer for 45 minutes.
  6. Adjust Sauce: Check sauce thickness after 45 minutes, adjusting as needed, and remove bay leaves before serving.
