2 pounds chicken wings, thawed
1/4 cup olive oil
2 teaspoons lemon zest
1/4 cup fresh lemon juice
1 tablespoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon cayenne pepper (optional)
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil. Place a wire rack on top of the baking sheet.
In a large bowl, combine the olive oil, lemon zest, lemon juice, black pepper, garlic powder, onion powder, salt, paprika, and cayenne pepper (if using). Mix well to create a marinade.
Add the chicken wings to the marinade and toss until they are evenly coated. Let them marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator for more flavor.
Arrange the marinated wings in a single layer on the wire rack. This allows for even cooking and crispiness.
Bake the wings in the preheated oven for 40-45 minutes, flipping them halfway through, until they are golden brown and crispy.
Once cooked, remove the wings from the oven and let them rest for a few minutes. Garnish with chopped fresh parsley before serving.
Notes
For extra crispiness, broil the wings for an additional 2-3 minutes after baking.
