- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup black olives, sliced
- 1/2 cup mozzarella balls, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup grated Parmesan cheese
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, mozzarella balls, and parsley.
- Pour the Italian dressing over the salad and toss gently to combine.
- Add salt and pepper to taste, then sprinkle with grated Parmesan cheese.
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
