A refreshing and colorful Italian Pasta Salad perfect for any occasion.

Ingredients

  • 8 ounces rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup black olives, sliced
  • 1/2 cup mozzarella balls, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red onion, black olives, mozzarella balls, and parsley.
  3. Pour the Italian dressing over the salad and toss gently to combine.
  4. Add salt and pepper to taste, then sprinkle with grated Parmesan cheese.
  5. Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
