Cucumber Salad Sandwiches are a refreshing and creamy treat perfect for a light lunch or snack.

Ingredients

  • 1 cup cucumber, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup mayonnaise
  • 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 8 slices of whole grain bread
  • Lettuce leaves, for serving

Instructions

  1. In a medium bowl, combine the chopped cucumber, cream cheese, mayonnaise, dill, lemon juice, salt, and pepper. Mix until well blended and creamy.
  2. Lay out the slices of bread on a clean surface.
  3. Spread a generous amount of the cucumber mixture onto four slices of bread.
  4. Top each with a lettuce leaf and cover with the remaining slices of bread.
  5. Cut the sandwiches into halves or quarters, as desired, and serve immediately.

Notes

  • For a crunchier texture, add finely chopped red onion or bell pepper to the cucumber mixture.
