- 1/4 cup mayonnaise
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)
- 1 teaspoon lemon juice
- Salt and pepper to taste
- 8 slices of whole grain bread
- Lettuce leaves, for serving
- In a medium bowl, combine the chopped cucumber, cream cheese, mayonnaise, dill, lemon juice, salt, and pepper. Mix until well blended and creamy.
- Lay out the slices of bread on a clean surface.
- Spread a generous amount of the cucumber mixture onto four slices of bread.
- Top each with a lettuce leaf and cover with the remaining slices of bread.
- Cut the sandwiches into halves or quarters, as desired, and serve immediately.
Notes
- For a crunchier texture, add finely chopped red onion or bell pepper to the cucumber mixture.
- Substitute the cream cheese with Greek yogurt for a lighter version, or try adding a splash of hot sauce for a spicy kick.
