Steak Au Poivre Soup is a creamy and flavorful dish that combines tender steak with a rich broth, perfect for a comforting meal.

Ingredients

Scale
  • 1 pound sirloin steak, trimmed and cut into 1-inch cubes
  • 2 tablespoons black peppercorns, coarsely crushed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • Salt to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the steak cubes with salt and the crushed black peppercorns, pressing the pepper into the meat.
  2. In a large pot, heat the olive oil over medium-high heat. Add the steak cubes and sear until browned on all sides, about 5-7 minutes. Remove the steak from the pot and set aside.
  3. In the same pot, add the diced onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  4. Pour in the beef broth and bring to a simmer. Return the seared steak to the pot and let it cook for 10 minutes.
  5. Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Simmer for another 5 minutes until heated through. Adjust seasoning with salt if needed.
  6. Serve hot, garnished with fresh parsley.

Notes

  • For a spicier kick, add a pinch of cayenne pepper or a splash of hot sauce to the soup.
  • Substitute the sirloin steak with tenderloin for a more luxurious version, or use ground beef for a quicker preparation.
