1 pound sirloin steak, trimmed and cut into 1-inch cubes
2 tablespoons black peppercorns, coarsely crushed
2 tablespoons olive oil
1 medium onion, diced
2 cloves garlic, minced
4 cups beef broth
1 cup heavy cream
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Salt to taste
Fresh parsley, chopped (for garnish)
Instructions
Season the steak cubes with salt and the crushed black peppercorns, pressing the pepper into the meat.
In a large pot, heat the olive oil over medium-high heat. Add the steak cubes and sear until browned on all sides, about 5-7 minutes. Remove the steak from the pot and set aside.
Pour in the beef broth and bring to a simmer. Return the seared steak to the pot and let it cook for 10 minutes.
Stir in the heavy cream, Dijon mustard, and Worcestershire sauce. Simmer for another 5 minutes until heated through. Adjust seasoning with salt if needed.
Serve hot, garnished with fresh parsley.
Notes
For a spicier kick, add a pinch of cayenne pepper or a splash of hot sauce to the soup.
Substitute the sirloin steak with tenderloin for a more luxurious version, or use ground beef for a quicker preparation.
