- 1 cup fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup cream cheese, softened
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 large tortilla (gluten-free if needed)
- 1 tablespoon olive oil (for brushing)
- Preheat the oven to 375°F.
- In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, garlic powder, black pepper, and salt. Mix until well combined.
- Lay the tortilla flat on a clean surface. Spread the spinach and feta mixture evenly over the tortilla, leaving a small border around the edges.
- Starting from one end, roll the tortilla tightly into a log shape.
- Slice the rolled tortilla into 1-inch pinwheels.
- Place the pinwheels on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil.
- Bake in the preheated oven for 15-20 minutes, or until the pinwheels are golden and the cheese is melted.
- Remove from the oven and let cool slightly before serving.
Notes
- For a spicier version, add a pinch of red pepper flakes to the filling.
- You can also substitute the spinach with kale or arugula for a different flavor profile.
