Ingredients

Scale
  • 8 ounces of spaghetti or rice noodles
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon Szechuan peppercorns, crushed
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons chili paste (adjust to taste)
  • 1/4 cup creamy peanut butter
  • 1 tablespoon honey or maple syrup
  • 1/4 cup water
  • 1/4 cup green onions, chopped
  • 1/4 cup chopped cilantro (optional)
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic, ginger, and crushed Szechuan peppercorns. Sauté for about 1-2 minutes until fragrant.
  3. In a bowl, whisk together the soy sauce, rice vinegar, chili paste, peanut butter, honey, and water until smooth.
  4. Pour the peanut sauce into the skillet with the garlic and ginger mixture. Stir well to combine and let it simmer for 2-3 minutes.
  5. Add the cooked noodles to the skillet and toss to coat them evenly with the sauce. Cook for an additional 2-3 minutes until heated through.
  6. Remove from heat and stir in the chopped green onions and cilantro, if using.
  7. Serve hot, garnished with sesame seeds.

Notes

  • For added protein, consider adding cooked chicken, shrimp, or tofu to the dish.
  • If you prefer a milder flavor, reduce the amount of chili paste or use a sweet chili sauce instead.
