A delicious and hearty skillet dish featuring ground beef and zucchini, perfect for a quick weeknight dinner.

  • 1 pound ground beef
  • 2 medium zucchinis, diced
  • 1 medium sweet potato, peeled and diced (about 1 cup)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for another 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced sweet potato, smoked paprika, oregano, salt, black pepper, and red pepper flakes. Cook for about 5 minutes, stirring occasionally.
  5. Add the diced zucchini to the skillet and continue to cook for another 5-7 minutes, or until the sweet potato is tender and the zucchini is cooked through.
  6. If using, sprinkle the shredded cheddar cheese over the top, cover the skillet, and let it melt for 2-3 minutes.
  7. Remove from heat and garnish with chopped parsley before serving.

  • For a healthier option, substitute ground turkey or chicken for the beef.
