1 cup unsalted butter, melted
1 cup granulated sugar
1 cup packed brown sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
1 cup fresh raspberries
1 cup heavy cream
1 tablespoon instant coffee granules
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a large mixing bowl, combine the melted butter, granulated sugar, and brown sugar. Mix until well combined.
Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
In another bowl, whisk together the flour, cocoa powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in the chocolate chips and fresh raspberries.
Pour the brownie batter into the prepared baking pan and spread it evenly.
Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
Allow the brownies to cool completely in the pan.
While the brownies are cooling, prepare the mocha mousse by whipping the heavy cream until soft peaks form.
Dissolve the instant coffee granules in 1 tablespoon of hot water and add it to the whipped cream along with the powdered sugar and vanilla extract, gently folding until well combined.
Once the brownies are completely cooled, spread the mocha mousse evenly over the top.
Chill in the refrigerator for at least 1 hour before serving to set the mousse.
Cut into squares and enjoy!
Notes
For a richer flavor, try adding a tablespoon of espresso powder to the brownie batter.
You can substitute the raspberries with strawberries or cherries for a different fruity twist.
