- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1 cup whole milk
- 1 teaspoon vanilla extract
- 1 cup fresh peaches, diced (about 2 medium peaches)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon brown sugar (for topping)
- 1 tablespoon coarse sugar (for topping)
- Preheat your oven to 375°F (190°C) and grease a standard muffin tin with non-stick spray or line with paper liners.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In a separate bowl, mix the melted butter, egg, milk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced peaches, cinnamon, and nutmeg until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- In a small bowl, mix the brown sugar and coarse sugar together. Sprinkle this mixture evenly over the tops of the batter in each muffin cup.
- Bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
- Allow the cruffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a richer flavor, consider adding a teaspoon of almond extract along with the vanilla.
- You can substitute the peaches with other fruits like blueberries or strawberries for a different twist.
