4 (6-ounce) cod fillets
2 tablespoons olive oil
Salt and pepper, to taste
1/2 cup unsalted butter (1 stick)
2 tablespoons Calabrian chili paste (adjust to taste)
2 cloves garlic, minced
1 tablespoon lemon juice
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Place the cod fillets on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
Bake the cod in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
While the cod is baking, prepare the Calabrian chili butter sauce. In a small saucepan over medium heat, melt the butter.
Once the butter is melted, stir in the Calabrian chili paste, minced garlic, and lemon juice. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant but not browned.
Remove the sauce from heat and set aside.
Once the cod is cooked, remove it from the oven and drizzle the Calabrian chili butter sauce over the fillets.
Garnish with chopped parsley before serving.
Notes
For a milder sauce, reduce the amount of Calabrian chili paste or substitute with a milder chili paste.
Serve the cod with a side of roasted vegetables or a fresh salad for a complete meal.
