8 ounces spaghetti or linguine
1/2 cup extra virgin olive oil
4 cloves garlic, minced
1 teaspoon red pepper flakes (adjust to taste)
Zest of 1 lemon
Juice of 1 lemon
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Cook the spaghetti or linguine according to package instructions in a large pot of salted boiling water until al dente. Reserve 1 cup of pasta water, then drain the pasta.
Add the cooked pasta to the skillet, along with the lemon zest and lemon juice. Toss to combine, adding reserved pasta water a little at a time until the desired consistency is reached.
Stir in the grated Parmesan cheese and season with salt and pepper to taste. Toss until the cheese is melted and the pasta is well coated.
Serve immediately, garnished with fresh parsley and additional Parmesan if desired.
Notes
For added protein, consider tossing in grilled chicken or shrimp.
You can substitute the lemon with lime for a different citrus flavor or add cherry tomatoes for a pop of color and sweetness.
