1 cup unsweetened almond milk
1/4 cup chia seeds
1/4 cup Greek yogurt
1/4 cup honey or maple syrup
1 tablespoon lemon zest
1/4 cup fresh lemon juice
1/2 teaspoon vanilla extract
Pinch of salt
Instructions
In a medium bowl, whisk together the almond milk, Greek yogurt, honey (or maple syrup), lemon zest, lemon juice, vanilla extract, and salt until well combined.
Stir in the chia seeds until evenly distributed.
Cover the bowl and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and thicken the pudding.
Once thickened, stir the pudding again to break up any clumps of chia seeds.
Serve chilled, garnished with additional lemon zest or fresh berries if desired.
Notes
For a creamier texture, blend the mixture before refrigerating.
