1 pound boneless, skinless chicken breasts
1 cup fresh basil leaves, chopped
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
2 large eggs
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup olive oil
Juice of 1 lemon
Instructions
Preheat your oven to 400°F (200°C).
Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.
In a shallow bowl, whisk together the eggs, lemon juice, garlic powder, salt, and pepper.
In another bowl, combine the breadcrumbs, chopped basil, and Parmesan cheese.
Dip each chicken breast into the egg mixture, allowing any excess to drip off, then coat it with the breadcrumb mixture, pressing gently to adhere.
Heat the olive oil in a large oven-safe skillet over medium heat. Once hot, add the breaded chicken cutlets and cook for about 3-4 minutes on each side until golden brown.
Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let the cutlets rest for a few minutes before serving.
Notes
For a gluten-free option, substitute breadcrumbs with crushed gluten-free crackers or almond flour.
Add a sprinkle of red pepper flakes to the breadcrumb mixture for a spicy kick.
