1 cup dried figs, stems removed and chopped
1/2 cup water
1 teaspoon lemon juice
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup rolled oats
1/4 cup brown sugar, packed
1/4 cup unsalted butter, softened
1/4 cup honey
1 large egg
1 teaspoon vanilla extract
Instructions
Preheat the oven to 350°F. Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a small saucepan, combine the chopped figs, water, and lemon juice. Bring to a simmer over medium heat, then reduce the heat and cook for about 10 minutes until the figs are soft. Remove from heat and let cool slightly, then mash with a fork to create a chunky paste.
In a medium bowl, whisk together the flour, baking powder, and salt.
In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the honey, egg, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the rolled oats.
Spread half of the dough mixture evenly in the prepared baking dish. Layer the fig paste over the dough, then drop spoonfuls of the remaining dough on top of the figs, spreading it as best as you can.
Bake for 25-30 minutes or until the top is golden brown. Allow to cool in the pan for about 10 minutes before lifting out using the parchment paper. Let cool completely on a wire rack before cutting into squares.
Notes
For a nutty flavor, consider adding 1/4 cup of chopped walnuts or almonds to the dough.
You can substitute the dried figs with other dried fruits like apricots or dates for a different taste.
