Ingredients
Scale
2 pounds boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup fresh lemon juice (about 2 lemons)
2 tablespoons fresh parsley, chopped
2 tablespoons fresh basil, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried oregano
1 teaspoon paprika
Instructions
In a large bowl, whisk together the olive oil, lemon juice, parsley, basil, garlic, salt, pepper, oregano, and paprika until well combined.
Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is cooked through.
Remove the chicken from the grill and let it rest for 5 minutes before slicing. This helps retain the juices.
Serve with your favorite sides, such as grilled vegetables or a fresh salad.
Notes
For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
Try substituting the chicken with shrimp or tofu for a different protein option.
