- 8 ounces halloumi cheese, cut into 1-inch cubes
- 1 red bell pepper, cut into 1-inch pieces
- 1 yellow bell pepper, cut into 1-inch pieces
- 1 zucchini, sliced into 1/2-inch rounds
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Wooden or metal skewers
- In a bowl, combine the olive oil, lemon juice, thyme, garlic powder, salt, and pepper.
- Add the halloumi cubes, bell peppers, and zucchini, tossing gently to coat. Let marinate for 15-30 minutes.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated halloumi and vegetables onto the skewers, alternating between cheese and veggies.
- Place the skewers on the grill and cook for 3-4 minutes on each side, or until the halloumi is golden brown and the vegetables are tender.
- Remove from the grill and serve immediately, garnished with extra lemon juice or fresh herbs if desired.

- For a smoky flavor, add cherry tomatoes or mushrooms to the skewers.
